This year we have a lot of cucumbers at our dacha as never before. Firstly, this was facilitated by the fact that my husband built a greenhouse from window frames - described in the article HERE. And secondly, because the whole spring and summer turned out to be very warm. So the question arose - should we freeze the cucumbers?
Of course, many housewives simply salt and pickle them. But, judging by the fact that we have ten cans of these pickled cucumbers in our cellar since last year, and we do not eat them so quickly, we decided to just freeze them. Is it possible to freeze cucumbers, readers will ask? Quite. You can freeze everything that grows in the country. And berries, and fruits, and vegetables. So, you can freeze cucumbers in four different ways according to the type of their subsequent use after defrosting:
1) Method one: with cubes.
We use this method in order to make okroshka or salad Olivier, or any other salad with cucumbers in winter. Take a cucumber, cut off the ends from it, cut it into four parts along, and then turn and cut it across. Thus, we get irregularly shaped slices (see the photo), just like for okroshka or Olivier salad. Although someone likes to cut a cucumber exactly into cubes, they can cut it that way. I don't bother - the main thing in winter is you pull out your cucumber grown in your country house, and from it the aroma throughout the apartment, not like from overseas long cucumbers - neither taste nor aroma.
Then we distribute the cucumber cubes on the plate, wrap the plate with food plastic wrap, and put in the freezer.
After six hours, we take out the frozen cucumbers and pour them into a bag, removing air from it with a straw. Well, you can immediately pour chopped cucumbers into a bag, remove air from it with a straw and tie the bag - as shown in the photo below.
2) Method two: in circles.
This method is applicable when we need to use cucumbers as a decoration for certain dishes, side dishes, etc., that is, when in the summer we cut cucumbers into rings - for these purposes we freeze in this way.Well, or when we make masks with cucumber circles. So, take a cucumber, cut off the ends from it and cut it into circles (as in the photo).
Then we distribute the circles on the plate, wrap the plate with food plastic wrap, and put the whole thing in the freezer.
After six hours, we take out the frozen cucumbers and pour them into a bag, removing air from it with a straw.
And this is what our frozen cucumbers look like when we got them out of the freezer. It is quite edible, especially since they will only be used for making salads or okroshka.
3) Method three. Cucumber juice.
This method is for those who like to make cucumber masks with cucumber juice. Take a juicer and make cucumber juice, which we then pour into an ice mold. We put it in the freezer. Then we sprinkle these cubes in a bag and put them in the freezer for permanent storage.
4) Method four. On a grater.
This method is very doubtful, since the end result is neither this nor that. That is, when we freeze the grated mass of cucumber, it seems to look good. But when we defrost ... You can try it yourself. I tried it last year and I don’t want it anymore.

Room illumination
Some people think that lighting has no effect on the shelf life of canned vegetables, but in fact, this is not the case. Experienced housewives recommend making sure that the room with twists is not too light. It is recommended to protect canned vegetables from direct sunlight, as they negatively affect the shelf life and taste of the workpieces. Therefore, the premises where the jars of cucumbers will stand should be without windows.

The higher the temperature, the faster the processes of salting and fermentation take place, which means that the product will quickly become salty and sour. To prevent this from happening so quickly, salted cucumbers, after pickling, must be stored in the refrigerator. Oxygen access accelerates fermentation, as well as putrefactive processes. There are a number of unusual ways to keep cucumbers fresh for longer:
- In a natural reservoir that does not freeze in winter. For this, vegetables are folded into a string bag made of synthetic material. From below you need to hem the load. Next, the vegetables are immersed in a pond. It is necessary not to forget to strengthen the load well.
- In earthenware with sand. The cucumbers are stacked in a container. Moreover, they should be well sprinkled with pre-washed and dried sand. The dishes are tightly closed and sent for storage to the cellar or basement. The shelf life will increase significantly if it is possible to bury the container with cucumbers in the ground.
- In the well. The vegetables are placed in a clean bucket and covered with gauze. Then they lower themselves into the well so that the bottom of the bucket slightly touches the water.
- In the cabbage. This is one of the more unusual storage methods. For this, the cucumbers must be planted between the rows with late cabbage. Immediately after the appearance of the ovary, the vegetables, along with the lash on which they grow, are placed between the cabbage leaves closer to the stump. So they continue to grow with the cabbage. It is necessary to store the heads of such cabbage in the cellar. This method helps to preserve cucumbers for up to 6 months.
- In a saucepan with vinegar. At the bottom of the enamelled container, 3 mm of vinegar is poured. A special stand with holes is placed in the container. Vegetables are stacked on top in several rows. The container is tightly closed and placed in a cool, dark place. The shelf life is about one month.
- In cans without salting. The fruits are wiped dry without damage and placed in a clean, sterilized jar. The container is 2/3 filled with vegetables. A paraffin candle is placed on top and set on fire. The candle burning time is 10 minutes. This will help burn the oxygen inside the can. Then the jar is tightly covered with a lid and placed in a cold place. The shelf life is up to 4 months.

- 30 days or more. To preserve the freshness of summer cucumbers until winter, carefully selected fruits must be folded into a deep saucepan with the sharp side down. Fill the container with ice water for a couple of centimeters and put it in the refrigerator. The water needs to be changed every day.
It is better to store cucumbers in the so-called "freshness zone", where the optimum temperature for vegetables and fruits is maintained. Moreover, one should pay close attention to possible "neighbors": apples and bananas actively "distribute" ethylene, which contributes to the early ripening and subsequently rotting of cucumbers.
