How to store rose hips correctly

Rosehip breeding methods

There are several ways to breed rose hips: seed, cuttings and root suckers. Let's consider them in detail.

Growing from seeds

The seeds should be harvested at the end of summer. This is the most suitable period, since at this time the fruits are ripe, and the seed has not yet had time to become solid. If harvested later, the seedling may not germinate due to the hardened shell. After harvesting, the seeds need to be washed, dried and mixed with a wet mixture of peat or sand (in a ratio of 1: 4). Thanks to stratification, conditions are created for them that are similar to natural ones. Store the mixture in a cool place. Planting germinated seeds in open ground can be carried out in spring or autumn.

Did you know? You can tell the time by the flowers of the rose hips: they open at 4–5 am and close at 7–8 pm.

But experienced gardeners recommend carrying out the procedure in October. Row spacing should allow for weeding. In the spring, for better seed germination above the planting site, it is necessary to install a frame with plastic wrap. Seedlings are planted after the first 2 leaves grow on them. If you did not have time to plant in the fall, you can also do this in the spring. The seeds are stored in boxes of sand or peat in a cool room. Stir the mixture several times during the winter.

Cuttings

The best period for this method is summer, when the shoots are actively growing. It is necessary to choose a plant of 5–7 years old and cut off powerful shoots from it, on which wood has not yet formed. It is better to carry out the procedure early in the morning, when the plant is filled with moisture as much as possible.

Important! All cuts must be made with special sharp scissors so as not to damage the tissue of the shoots. For a good result, you need to do the following:

For a good result, you need to do the following:

  • cut an annual shoot on the bush;
  • cut the shoot into pieces so that each pruning has 2–4 buds (10–15 cm);
  • make a horizontal cut over the upper kidney;
  • make an oblique cut under the lower kidney;
  • cut the lower leaves.

As a result, you will get cuttings with 2-3 internodes. You can plant it directly in open ground, but more often it is done in a container, greenhouse or greenhouse.
Propagation of rose hips by cuttings: 1 - cutting the cuttings; 2 - stalk at the time of planting; 3 - cutting 4 weeks after rooting; 4 is a new plant.

Root offspring

It is a popular breeding species for many crops. For this, the most powerful and healthy bushes are chosen. Terms - late autumn or early spring.

There are two ways to carry out the procedure:

  1. In the first case, the offspring is selected (height 25–40 cm), which is separated from the mother bush with a shovel. This method is carried out both in the fall and in the spring.
  2. In the second option, there is no need to separate the adventitious bush. It periodically needs to be watered and hilled. As a result, the offspring must put down adventitious roots. A year later (in autumn), the new bush is separated from the mother plant. In this form, it is left until spring. And as soon as the snow melts and the earth warms up a little, you can transplant a new bush to a permanent place. The main thing is not to damage the root system.

How to store rose hips in the freezer

The use of a freezer is suitable for those who do not particularly like dried fruits. I freeze in two versions: whole berries and berry puree. I will share in both ways.

To freeze whole berries you will need:

  1. Remove tails and leaves, as well as clean up debris that may be on the surface. Rinse under running water.
  2. Dry. You can naturally, or you can use a towel, the main thing is that the rose hips are not damaged.
  3. Arrange the berries in one layer on a wooden board. Make sure that the fruits do not come into contact with each other.Place in the freezer for 2-3 hours.
  4. Then remove and place in plastic containers or bags. Place in the freezer for permanent storage.

Pre-freezing helps the fruits to freeze and not stick to each other. In this form, the berries can be stored for up to a year. To defrost it, just take out the rosehip and pour it first with cool water, and after 1 hour with warm water. So the crop will quickly defrost and will not lose its useful properties and taste.

In frozen form, you can also prepare rosehip puree. I will share with you my favorite recipe.

Do you make rosehip puree?

Not really

Grocery list:

  • rosehip - 2 kg;
  • icing sugar - 750 g;
  • lemon - 1 pc.

Cooking sequence:

  1. Sort the berries carefully, discard all those that are spoiled.
  2. Pour cool water into a saucepan or bowl. Leave in this state for 10-15 minutes. Then drain the water and use a sharp knife to cut off the brown seals that are on both ends of the rose hips.
  3. Wash the rose hips again. Place in an enamel pot and fill with water so that it rises 2-3 cm above the fruit.
  4. Put on fire. After boiling, boil for 45-50 minutes until tender. You can check the readiness like this: take one berry and try to crush it in your hand. If it is squeezed without problems, then the rosehip is ready.
  5. Let the mixture cool completely.
  6. Then chop the rosehip in mashed potatoes in any way convenient for you. To remove any pits that might get in the way, pass the puree through a fine sieve. This will make the mass completely homogeneous.
  7. Transfer the puree to plastic containers. Add the juice of half a lemon there and stir. Cover and store in the freezer.

Live jam is ready. The calorie content of a portion per 100 g is 137 Kcal. The shelf life is from 6 to 8 months.

How to dry rose hips in the oven correctly

No matter how they bragged about the current technologies, but earlier it was easier for people in some matters. For example, do you urgently need to dry the rose hips?

We lay out the freshly picked berries on the stove, which is previously covered with a cloth, and wait a day or two until they are completely dry.

But such a stove is unlikely to be placed in an apartment, so a simple gas oven will come to our aid, which will help the rosehip get rid of excess moisture. The main thing here is to provide the berries with a low temperature so that they do not burn in any way.

Drying rose hips in the oven does not take much time, so it is done in just a few simple steps.

  1. When sorting through the rose hips, you need to get rid of damaged fruits, as well as excess debris. It is strictly forbidden to wash the rose hips, because moisture can disrupt the drying process, and the structure of the berries can be damaged.
  1. We distribute the berries all over the baking sheet so that one even layer forms. While you are preparing the fruit, immediately preheat the oven to 50 degrees. And after placing the prepared baking sheet with berries, we increase the temperature to 60 degrees.
  1. We leave our fruits for about 8 hours, while it is necessary to periodically open the oven so that the berries are not too hot. After all, they may not dry out, but simply let the juice out, due to which the shape of the berry will be damaged, and the vitamins will evaporate.
  1. Too high a temperature can lead to darkening of the berries, while some of the nutrients will still remain, but the taste will suffer quite a lot.
  1. After the expiration of time, we remove our fruits from the oven and leave them for a while so that they cool down.We also distribute the finished berries in some containers or simply pour them into a bag.

Of course, natural drying will give a better product, but there is a risk that all the berries may be spoiled.

Therefore, it is better to play it safe and prepare the berries in the oven, because this excludes all chances of retaining any amount of moisture in them.

So, you will get a quality product that will be stored for a fairly long time, if you do it right, of course.

Storing rose hips plays an important role, therefore, this stage should also be given attention.

4 Blanks using rose hips

If you want to surprise your guests, then you can make compote, jam or jelly from rose hips.

  1. 1. Rosehip and sea buckthorn compote. A very tasty and unusual drink. Fresh berries are used for its preparation. They must be rinsed, cut into halves and scrubbed with a coffee spoon to remove seeds and hairs. Sea buckthorn also needs to be sorted out and washed. Liter jars must be filled with berries, alternating their layers. At the same time, the proportion should be maintained - for 1 part of sea buckthorn, 3 parts of rosehip. Then pour the boiling syrup over the fruits (500 g of sugar per 1 liter of water) and roll up.
  2. 2. Rosehip jam. It is brewed in the ratio - for 1 kg of berries, 1.3 kg of sugar. Wash, cut and peel the rose hips. Blast them in boiling water for about 2 minutes, then drain the water. This water can be used to make 70% sugar syrup. In the resulting syrup, you need to place the berries for 4 hours, and then cook the jam until tender. Dispense in sterilized jars.
  3. 3. Rosehip jelly. 1 kg of berries, peeled from seeds and hairs, pour 600 ml of water and boil over low heat until they soften. Then rub them to release the juice. Dissolve a pound of sugar in the resulting juice and cook until you get a jelly consistency.

Rosehip is a valuable product that can be used in many different ways. Now that you know how to dry rose hips according to all the rules, you can create yourself a supply of vitamins for the whole winter. Fragrant rosehip tea with herbs or exotic jam or jelly will give you and your loved ones incredibly warm and soulful tea drinking on long winter evenings.

Optimal time for collecting rose hips

To correctly determine the optimal time for collecting rose hips, you need to focus on external signs. Fruits are considered to be well ripe when the sepals come loose from them and do not fit tightly. At the same time, the dog rose itself has a bright red or bright orange color. If the fruits

  • too dense
  • very pale
  • sepals fit tightly to them,

- to collect early. Overripe rose hips darken and become soft. It contains more sugars, but less vitamin C.

Rose hips are usually harvested from late August to late October. In central Russia, as a rule, fruits are harvested and harvested in the second half of September, in the Urals - from the second decade of October until November, in Rostov and more southern regions - from the end of August to the first half of September, so that they do not overripe and crumble ... But these are average recommendations. The timing of collection also depends on the variety of shrubs, weather conditions and other factors.

I collect rose hips every year. I live in central Russia, so I can't harvest before the second decade of September. I always focus on external signs. The rose hips should ripen well, but not overripe. Soft and crumbling berries are more difficult to pick and less useful.

Rosehip care

In order for a wild rose to quickly adapt to new conditions and fully develop, it is necessary to provide competent care from the first days.

It consists in:

Moderate periodic watering. The plant tolerates prolonged heat and drought well. Therefore, mature bushes do not require frequent moisture, which cannot be said about young seedlings.In hot weather, they need to be watered regularly (each bush requires no more than 2 buckets of water)

Also, increased attention is needed for fruiting roses. It is recommended to pour about 5 buckets under them.

During the season, it is desirable to carry out 3-4 soil moisture. Remember to loosen the soil in your garden and cover it with mulch.

Timely feeding. They are relevant only for young bushes at the beginning of the growing season, in the spring, during the ripening of fruits and after they are removed from the branches. Better to add, diluted in a ratio of 1:50, chicken droppings. From the second year of life, the bushes do not require special care. It is advisable to feed them every 3 years.

Regular anti-aging pruning. The fact is that all Rosaceae have a tendency to partial loss of shoots as a result of drying out. This process occurs at intervals of 4-5 years. Rosehip pruning is carried out in the spring in the first year of life, removing all branches on the seedling. Shoots are left on the seedling, 5-10 cm high. In the future, it will be necessary to thin out the crown once every 3 years. In order to increase the yield, immediately form it from 15 shoots. At the same time, make sure that the branches are of different years and it is desirable that among them there are no specimens that are more than 7 years old.

Experts strongly recommend pruning in the spring. In their opinion, the shrubs are severely injured when removing unnecessary shoots and will not be able, in the case of an autumn haircut, to winter safely. Please note that thoughtlessly shortening the branches will not improve the yield of the bush, but will only provoke an intensive growth next spring. As a result, the wild rose, not having time to complete the process of forming young shoots, will stop fruiting.

Did you know? Rosehip berries contain 50 times more ascorbic acid than lemons.

Is it possible to freeze rose hips in the freezer for the winter. How to freeze berries for the winter

It is recommended to freeze ripe berries immediately after they are removed from the bush. From which follows a sad conclusion: berries bought on the market and lying for at least a day before getting on the counter are absolutely not suitable for freezing. Berries from the supermarket are even less suitable for this purpose. As a rule, they are transported from afar and by the time they are delivered to the end consumer, there can be no question of any freshness.

Is it a shame? Still would! But wait, despair. It is quite possible to buy freshly picked berries in the nearest village or summer cottage settlement.

For general strengthening of the body, rose hips are indispensable in the period of exacerbation of colds, mainly due to the rich presence of vitamin C. In autumn and winter, stocks of parts of frozen rose hips will be an excellent help in maintaining the health of the whole family.

First, let's figure out whether it is possible to freeze rose hips for the winter. Like other berries and vegetables, rose hips are easy to freeze. This process preserves all the nutrients of fresh berries immediately after harvest.

Naturally, at first it will be necessary to subject the rose hips to special processing in order to ensure the reliable preservation of the product and its benefits.

You can of course freeze rose hips. Despite the fact that many are used to drying it, freezing is also a good way to preserve it. The main thing is to properly freeze the rose hips, so that the vitamins are preserved.

Of course it's interesting. But does it make sense to freeze what can be dried. Dried rose hips are stored for a very long time and well. This is usually what they do to him. The freezer is not rubber for people. Therefore, consider whether there is a need to freeze it or it is easier to dry it.

Rosehip is a medicinal plant that contains a large amount of vitamin C.

Rosehip berries are taken in the form of decoctions, tinctures, syrups.

To make tea from rosehip berries in winter, they can be pre-dried or frozen in the freezer.

You can freeze rose hips, it will not lose vitamins from freezing, and you can store it in the freezer for a long time. Before freezing, you need to wash the berries and then dry them, only then put them in a plastic container or plastic bag.

Freezing rose hips for the winter is one of the best ways to preserve vitamins in nm. Rosehip must be processed to freeze. It is good to freeze rosehip puree, peel the seeds of the rosehip and grind it, then put it in a container and in the freezer and store for a year.

Not that you can, the rose hips need to be frozen for the winter, because they are very healthy!

I remember even in childhood we found it in the winter and collected it, so it retained its properties in the cold.

Rosehip can also be dried.

Yes, you can. Then you can cook a decoction from it - pouring water directly in unfrozen form (water at room temperature or cold, but not boiling water).

If there is room in the freezer, you can freeze the rose hips.

I once tasted one year a little, I liked it better with ice cream.

But there is not enough space, I now not only ice berries, but also some vegetables, so I dry the rose hips the old fashioned way.

Rosehips can be frozen, but I would recommend drying them better. Just spread the rose hips on the newspaper and have a direct light source coming in. This way you can preserve the beneficial elements in the rose hips.

The rosehip does not need to be frozen, it can be rinsed and dried until it is wrinkled and hard, and the rosehip keeps well. If then it is slightly poured (not in cereals, but in large chunks), you can pour boiling water and insist a little, you get a delicious vitamin drink, like compote.

Such a rosehip can be brewed, added to various dishes (for example, in cereals), well, and simply, to eat.

How to choose the right berries

Strictly speaking, the real rose hips - nuts - are under the juicy peel. The brightly colored "berry" is formed as a result of accretion of the lower parts of the petals and sepals. Dry yellowish wild rose nuts are called seeds in everyday life. Maturity is determined by the color and taste of the fruit characteristic of each species. Bright red-orange berries contain more carotenes (provitamin A). The pulp is sweet and sour, pleasant to the taste. Acidity is determined by the content of vitamin C (ascorbic acid). The fruits are also rich in vitamins B1, B2, PP, K, flavonoids.

The dog rose, which is less rich in nutrients, is easily recognizable by its thick green shoots, reddening on one side. The flowers of this species are light pink, odorless. Fruits are smooth, bright orange, up to 2.5 cm long.

1 Rules for picking berries

Rosehip fruits help to cope not only with colds, but also treat anemia, atherosclerosis, hypertension, gastritis, stomach ulcers and gynecological diseases

So that they do not lose their miraculous properties, it is important to follow the rules for collecting them:

  • Fruits can be harvested from late August until frost.
  • It is better to pick off the berries before they have time to fully ripen. Slightly unripe fruits contain more vitamins and tolerate drying well. These berries are bright red in color and have a sour-sweet astringent taste.
  • Give preference to the largest fruits, they are the most useful. The puffy sepals of the peduncles also speak of their usefulness.
  • Tear off the berries together with the receptacle and stalks, the dried rose hips will be much easier to clean from them.
  • After harvesting, you need to start drying as soon as possible, because the berries deteriorate very quickly.

The picking time of the rose hips plays a key role in the harvesting process. If you miss the moment, and the fruits stay on the branches for too long, the vitamin C content in them will decrease several times.

But at the same time, the amount of sugars will increase. Therefore, before collecting rose hips, decide on your goal - a healing effect or taste. The composition of the berries is also influenced by the air temperature. With the onset of cold weather, a gradual decrease in the level of ascorbic acid will begin, which will make the fruit tastier, but not so healthy.

There is a popular belief according to which the harvesting of this berry should begin on October 1. On this day, in the old days, they even celebrated a holiday - the day of Arina Shipovnitsa. But this plant grows practically throughout the entire territory of our country, in different climatic zones, therefore, it will ripen at different times. If in the northern latitudes the berry can be harvested already at the end of summer, then in the south the harvesting time can move until October, or even November. Everything will depend on the weather and the beginning of the frost period.

Collecting berries is only half the battle. You also need to properly prepare them for storage in order to provide yourself with useful vitamins for the whole winter. It is best to store the fruits in a dried form, so further we will consider how to properly dry the rose hips.

How to brew rose hips correctly

In cooking, a lot of dishes and drinks are prepared with the addition of rose hips: jelly, compote, fruit drink, preserves, jam, jelly, marmalade. Each of them has healing properties, helping the body replenish its supply of vitamins and minerals and strengthen the immune system.

Rosehip jam

From rose hips, syrups, infusions, decoctions, extracts and even alcohol and vodka tinctures are prepared. The therapeutic spectrum of the miracle plant is not limited to colds, it is recommended to take it with:

  • anemia and general exhaustion;
  • diseases of the female organs;
  • problems with the digestive system, intestines, liver;
  • urological diseases;
  • atherosclerosis;
  • neurasthenia;
  • bleeding and slowly healing wounds;
  • poorly healing fractures;
  • arthritis;
  • bronchial asthma and pulmonary tuberculosis.

Before preparing medicinal drinks, dried berries are washed, dried and crushed in any convenient way - cut with a knife, passed through a meat grinder, and crushed with a pestle. You can brew whole berries, but it is believed that less nutrients will get into the drink or dish this way.

With any method of brewing rose hips, the proportion is considered optimal, at which 1 liter of water is used per 100 g (4 tablespoons) of fruit.

On a water bath

A drink prepared in a water bath is used to strengthen the immune system. To cook rose hips, put 2 tbsp in a small saucepan or ladle. l chopped berries and pour 2 cups of hot water (70-80 ° C). The ladle is placed in a water bath - a pot of larger diameter with slightly boiling water. The drink is kept in a water bath for 15-20 minutes, then removed, cooled and infused for 24 hours.

Rosehip decoction

Rosehip decoction

The fastest way to get a pleasant sour drink is to make a decoction of rose hips. To do this, take a handful of berries, pour 1-1.5 liters of boiling water and cook over low heat for 10-15 minutes. Boiling draws out the maximum amount of coloring and flavoring components from the berries, as a result of which a rich "tea" is obtained. However, there is no need to talk about the benefits of such a drink, because prolonged exposure to high temperatures destroys the vitamins and nutrients that make up the berries.

In a thermos

The most effective way to brew rose hips is to brew in a thermos. At the same time, all vitamins are preserved, and the color and taste of the drink is as saturated as possible.

Rosehip infusion in a thermos

To brew rose hips in a thermos, it is enough to take 3-4 tbsp. l chopped berries, pour into a thermos and pour 1 liter of boiling water. Close the thermos and hold it for several hours. It is most convenient to brew berries at night, then in the morning there will be a delicious and healthy drink on the table.

Regardless of the method of preparation of rose hips, before using it, it must be sure to strain it through a strainer or 2-3 layers of gauze - this will separate all small particles and hairs that can irritate the throat and stomach.

Alcohol tincture

It is useful to take alcoholic rosehip tincture to prevent atherosclerosis and strengthen immunity. For preparation, a glass of dry berries is washed and slightly steamed. Prepared fruits are placed in a liter jar or bottle with a wide neck, add 150-200 g of sugar and pour in 0.5 liters of vodka. The container is closed with a lid and insisted for 25-30 days in a dark place, periodically shaking it.

The finished "medicine" is filtered and taken a day, 15-25 drops on a piece of refined sugar or diluted with 1/3 cup of water or tea. To soften the taste, additional ingredients are added to the classic tincture recipe: apples, citrus fruits, mint, bay leaves, mountain ash, cranberries and even ground coffee.

The use of alcoholic rosehip tincture is contraindicated in children, pregnant and lactating women, persons with alcohol intolerance and liver diseases.

Storing dried rose hips

After carrying out all the stages of the procedure for harvesting dried rose hips, it can be stored.

Wild rose fruits must be stored in glass or tin cans.

It is not recommended to seal them tightly with lids, as the berries can become moldy. Instead, you can use folded cloth or gauze, or plastic lids with holes. For the same reason, plastic bags are not suitable for storage.

Cardboard boxes and cloth bags can also be used to store dried rose hips. They must be perfectly dry and clean and free of foreign odors. The bottom of the boxes should be pre-lined with waxed paper.

To preserve the beneficial properties that rose hips are saturated with, it must be stored in a dark place without direct sunlight. If moisture gets in, dried berries can become moldy, so from time to time it is necessary to look through the stocks harvested for the winter.

Properly harvested and dried rose hips retain their healing properties for up to 2 years.
