First, wash the berries and peel off the tails. Then put in a bowl and cover with sugar (about 400 grams). Close the bowl with a lid and refrigerate for 24 hours.

The next day, drain the juice from the bowl into sterilized jars, close them with lids. You can use this juice for no more than two months.

Pour 350 grams of sugar with 400 ml of water and simmer. After the mixture boils, pour the berries into the resulting sugar syrup, which were previously settled in the refrigerator. With the lid on, continue cooking for five minutes.

Then remove the syrup from heat and let cool. After fifteen minutes, pour the syrup into sterilized jars to drain, use a colander. Roll up the banks. Put the remaining berries on a baking sheet and let cool. Preheat the oven to 85 ° C and place the cooled berries there for half an hour. Then take out the strawberries, let them cool, stir and put them back in the oven. Repeat this action twice, but try not to overcook.

Transfer large-fruited strawberries from a baking sheet to a sieve and leave at a temperature of 30 ° C. After 6-9 hours, transfer the berries to paper bags.

In such packages, the sweetness should lie for six days. Sun-dried strawberries are ready to eat. Ready-made dried dessert is stored at a temperature of 12-18 ºС in tightly closed glass jars.

It is very easy to make strawberry jelly for the winter, even a novice "procurer" can handle it. Below you can see the basic recipes. Jelly with gelatin. For cooking, take:

  • 1.2 kg of raspberries;
  • 150 ml of water;
  • 120 g sugar.

Step-by-step recipe:

  1. Wash the sorted berries and pour into a saucepan. Using a blender, grind the raspberries to a thick puree and add water.
  2. Send to the stove and heat without boiling. As the composition becomes hot, it must be removed from the heat.
  3. Cover the pot and set aside for 20 minutes.
  4. Filter the cooled raspberries through a double layer of gauze. Pour the strained dark crimson juice into a saucepan, add sugar and stir.
  5. Boil the drink for 5 minutes, pour into jars and seal.

Organize a water seal (how to do this is described in detail in) and put the container in a warm place for a period of vigorous fermentation, which will take 2-3 weeks

When the gas ceases to be released through the shutter, clarification will begin (turbidity and pulp particles settle to the bottom of the container).
Carefully drain the clarified mixture from the sediment. Add the remaining sugar by dissolving it in a little liquid (water or fermented mixture)

Replace the water seal.
Wait until the end of the second fermentation and re-clarification. Drain the drink from the sediment again and pour the clarified liquid into clean bottles or glass jars. Close the containers tightly and put in a cool dark place.

The process of "maturation" of wine takes 4-5 months. This year's drink can be tasted in winter. In the future, raspberry wine can be stored indoors without losing consumer qualities for several years.
