Signs of spoilage:
- smell. The character depends on the composition, the amount of meat and vegetable ingredients. More often there is a sour smell, then musty notes with mold, bitterness, missing eggs appear;
- Colour. A gray, yellow tint appears. Uneven pigmentation changes are possible. The spots are deep, going inward;
- surface. The slice is the first to disappear. It feels sticky when touched. Then it appears under the shell, turns into mucus, a slippery coating;
- taste. The first changes appear long before external signs. Boiled sausage turns sour, then bitterness, herbaceous notes, the taste of missing raw meat appear.
Expiration dates change along with GOSTs. Popular manufacturers have put on stream the production of sausages according to technical conditions. This technique allows you to make adjustments to the recipe for cooked products, change ingredients, and bypass existing rules. Hence the difference in the shelf life of different types. We recommend that you familiarize yourself with the information on the packaging.
Vacuum packaging, closed containers, cans will help to preserve the freshness of boiled sausage products at home as much as possible.
It is important not to keep products in a warm place, put them in the refrigerator as soon as possible.

Types of sausages and their features
The history of the appearance of sausages dates back to the 18th century. The first sausages appeared in Bavaria. They were created by the butcher Johann Lanner. He developed a delicacy for the citizens of his country with the aim of a variety of common dishes. Ancient people made a semblance of modern sausages. They mixed the meat of killed animals with spices and ate it. Over time, the recipes have improved more and more, new types of sausages have appeared (smoked, dried).
The popularity of the product is gaining momentum. Sausages are stored after opening the package for 2 days. They should be cooked for several minutes. Additionally, you can fry them in a pan. So the shelf life of sausages can be extended by another 48 hours. It is recommended to use it with various side dishes, sauces and as an independent dish. Sausages are popular. They are easy to cook. Suitable for quickly satisfying hunger, children love to eat them for breakfast and with their help you can cook dinner in a short time.

Boiled sausage is only cooked at a temperature of 80 ºC during the manufacturing process. Therefore, it remains usable for only a few days. If the packaging of the product indicates that it will remain fresh for a week or longer, it means: the product is of poor quality (it contains preservatives).
The production of boiled-smoked sausage takes place in 2 stages: first it is boiled and then lightly smoked. For this reason, the shelf life of such a product is much longer than that of boiled water.
Raw smoked and dry-cured sausages have the longest shelf life. But you can keep it sliced in the refrigerator at a temperature of 15-18 ºC for only 6 days. Lowering the temperature by 10 ºC will increase the shelf life by 2 days.
It is better to save a whole stick of raw smoked sausage vertically, hanging it from the wire rack: this way it will cool evenly. In this case, it is recommended to wrap the sausage product with foil or paper: this will prevent it from drying out.
Tips for freezing and thawing smoked sausage
- It is not recommended to freeze the whole sausage. Better to cut it into pieces for the intended use, or cut into thin slices.
- Wrap the sausage slices in foil or parchment paper and freeze. Freezing will prolong her life up to 4-6 months.
- Before serving, the sausage must be properly defrosted. The best and perhaps the only way is defrosting on the bottom shelf of the refrigerator. After three hours of gentle defrosting, the product is ready for use.
In order to avoid unnecessary trouble, it is necessary to correctly calculate the amount of products necessary for the festive table. Then the questions of how to freeze Olivier and sausage will fall off by themselves.

Answer from Meggie
I freeze sausage, sausages, fresh herbs, grated carrots and freshly bought loaves in a number of five pieces (so as not to go to the store often!)
Answer from Irina
It all depends on the quality of the sausage. Boiled is not worth it.The moisture in it will freeze and when thawed, the sausage will be watery, but it can be used for some simple pasta gravies. Just keep in mind. that the sausage will become a little saltier, the same with the sausages. But smoked can be, the moisture in it is much less .... Only you will have to use it right away. in the thawed product, all sorts of unhealthy bacteria begin to multiply very quickly
Sausage is the most popular appetizer to the table and an excellent snack when there is no time for a full meal. There are many varieties of meat product, some more often use aromatic smoked, or tender boiled, others prefer delicious dry-cured.

Storage methods without a refrigerator
It is clear that you can store frozen sausages in the freezer for a very long time. And all types, regardless of the type of packaging, should be stored in the refrigerator. If this is not possible, then the storage time at room temperature should be no more than 3 hours, in summer the time is reduced to 1 hour. After a while, bacteria begin to appear and multiply.
Attention!
You should not eat sausages that have been warm for a long time. It is hazardous to health.
If the sausages are in natural casing, the shelf life is 24 hours. If the shell is artificial, then the time increases to 2 days. These figures are relevant for all types of sausage product. But it should be borne in mind that storage conditions may be violated in the store. If the buyer doubts the freshness of the product, then it is better to refuse the purchase.
A large number of dishes can be prepared from sausages:
- Grilled sausages. The product is fried over an open fire for several seconds from all sides. They are eaten hot. It is better to eat them immediately after cooking, after a while they will lose their attractive appearance.
- In the test. It satisfies hunger well. Often implemented among young people and adolescents. To prepare the dish, you should use a premium sausage product. Store sausages in the dough after cooking in the refrigerator after cooking is allowed at room temperature for 24 hours. Warm up before eating.
- Hot Dog. This fast food has long been very popular.The sausage is wrapped in pita bread or thin dough. You can supplement the dish with ketchup, mustard. You need to eat a hot dog within a few hours after cooking. Cold, it loses its taste.
Sausage dishes are delicious and easy to prepare. But often they should not be eaten. Enhancers of taste can provoke addiction, and the number of calories - obesity. Boiled sausages are stored in the refrigerator for no more than 2 days. Therefore, the shelf life of the sausages in the dough in the refrigerator will be the same.
What to do if the expiration date of raw smoked sausage has passed
How to determine the spoilage of a product by its appearance:
- the color of the smoked meat becomes whitish, greenish, spots and bloom appear;
- the aroma acquires a pronounced sour or sweetish, salty odor;
- the products become slippery or sticky to the touch;
- the sausage can taste bitter or sour.
Of course, you can revive the sausage. For example, boil it with the addition of salt in a container for 15 minutes over low heat. But it should be borne in mind that harmful microorganisms left the products of their vital activity. Therefore, it is better not to risk your health. Food poisoning is a serious problem.
Is it possible to cook frozen sausages
Cooking frozen sausages is as easy as boiling chilled sausages. The question is how to quickly defrost sausages. They defrost in the microwave in a few seconds, or boil immediately. You can immediately throw the product into boiling water, so it will retain more nutrients during cooking. To be sure, the frozen product is placed in cold water and then heated. So the meat will definitely cook. Defrosting is worth the time if it is a grill product, so that it fries well both outside and inside under the shell.
Sausages, sausages and sausages are delicious, nutritious and convenient food. But you shouldn't buy perishable semi-finished products for future use. The exact expiry date is always indicated on the sausage packaging and should not be ignored. An expired product, as well as improperly stored, can harm health.
Homemade sausages
Ukrainian meat or liver sausage, homemade kupaty - all this is so tasty that you want to stock up on as much as possible. But their shelf life is even shorter than that of boiled sausage.
In raw form, these products are stored for no more than a day. Ready for 3-4 days. There are 2 ways to extend the shelf life:
- freezing raw sausages extends the storage period up to 2 months, only you need to defrost it in the refrigerator, and only then cook. This does not apply to blood sausages - they should not be frozen raw;
- if you pour the cooked sausage with melted well-heated pork fat and close the lid tightly, then the delicacy will be stored for up to 5 weeks in the refrigerator.
You can also freeze the finished one, but then it would be more correct to reheat it either in the microwave or in the oven, be sure to cover the dishes with a lid.
By the way, a great way to always have the opportunity to make homemade sausage or kupat is to prepare pork intestines for future use. We add a little salt to the well-washed natural casing and freeze in portions. Then you just have to get it out, let it thaw and you can stuff it with any minced meat.
If you do not know how to prepare pork intestines for cooking or freezing, then I suggest an excellent video:
How long can the product be stored in the refrigerator after opening?
Opened boiled sausage can be stored in the refrigerator for up to 7 days. For raw smoked sausage, this period is 3 weeks, but when placed in the freezer, it will increase to 2 months.
Contrary to popular stereotype, you should not put a product in a plastic bag before placing it in the refrigerator - this will shorten its shelf life. It would be best to wrap the sausage in edible paper or put it in a plastic container.
If you smear a cut of sausage with fresh lemon juice, fat or egg white, and then wrap it with cling film, this will extend its shelf life. If the product has been pre-cut into pieces, it can be wrapped with cling paper or foil.
