Wherever dried fruits are stored - in a basement, cellar or apartment, you need to know about storage rules, such as:

You can also use: cardboard boxes, wicker baskets, plastic containers. But all these accessories are not suitable for long-term storage. If you nevertheless chose such a container, then the drying should be very well dried. Otherwise, poorly dried fruits will start to rot.
For storage of dried fruits, it is categorically impossible, even temporarily, to use plastic bags. Any hole or break formed in them will lead to the fruit being unusable and moths. In addition, moisture builds up in the bags, which is very bad for drying.
How to prepare apples for storage
Before putting apples into storage, they need to be prepared. Consider these points:
- Variety. Not all varieties are suitable for long-term storage. Some, for example, will not lie for two weeks even if all the rules and conditions are met (this applies to early ones). I recommend giving preference to late-ripening varieties. Best of all are “Bogatyr”, “Vityaz”, “Melba”, “Chosen One” and a number of others.
- Do not wash apples in water. A natural matte layer should remain on the surface, which protects against pests and fungal diseases.

But it is important that the upper containers do not put too much pressure on the lower ones - therefore it is not recommended to hammer wooden containers with apples to the brim. Otherwise, the bottom fruits will be deformed and crushed.

The second common option is to keep the crop in a cardboard box.

Then everything is simple. They put apples in the boxes and cover the container. With the onset of severe cold weather, you can put additional insulation material on the box. Accordingly, take off the shelter as it gets warmer.
If the balcony is insulated, then it is convenient to store in bags, but it is better to hang them. Therefore, you need to pack a little, 2-3 kg. You also need to make holes in the bags for ventilation.

Storing apples in the refrigerator

If you nevertheless find uninvited guests in the preparation, do not rush to throw the dried fruit into the trash can. You can try to repair the product in one of the following ways:
- dry the apples in the oven at a low temperature (+ 50… 60 ℃) for half an hour. This method can be used if the drying is damp or moldy;
- place the dried fruit in a -15 ℃ freezer for 30-60 minutes. In winter, you can take the dryer out to the balcony or outside and leave it for the specified time. Shock heat treatment will help kill all parasites. After the procedure, wash and dry the container in which the workpiece was stored, change the paper bedding in the boxes.
If the drying is a little damp, it can be dried in direct sunlight or in the oven.

What is the best way to store apples?

How to prepare apples for drying?
Before you start harvesting apples for the winter by drying, you need to properly prepare the fruits for such processing. Fruits of medium and large size, with a thin skin and a small seed chamber, are best suited for processing by this method; when they are dried, a minimum amount of waste is formed.
For drying, so that the finished product has a good taste, only ripe apples are used, the preparation of which for processing is as follows:
- The fruits intended for drying are thoroughly washed, with a knife spoiled places and wormholes are removed from them. After washing, the apples must be wiped dry to speed up the drying process.
- If the apples are dried exclusively for compote, then it is not necessary to remove the core from them, but if the prepared dried fruits are also planned to be used for baking, then this should be done. To perform this procedure, you can use a special device in the form of a tube with a sharpened end part, or simply cut the fruit into slices and use a knife to remove the inedible parts from them.
- It makes sense to peel apples before drying them only if they are purchased in a store or on the market. Fruits grown on their backyard, in order not to lose most of the vitamins and nutrients they contain, it is better to dry together with the peel.
- In order for the apples to dry quickly and evenly, they are cut into pieces, the thickness of which should not exceed 5 mm.
- To protect the cut fruits from darkening during the drying process, they can be soaked for several minutes in a solution of water with salt (10 grams of salt per liter of water) or acid (2 grams of citric or acetic acid per liter of water).
To speed up the processing process, freshly cut fruit can be blanched, which can be done in one of two ways:
- chopped fruits are placed in water heated to a temperature of 90 for a few seconds;
- a sieve with sliced fruits is kept over a container of boiling water.
Having decided to blanch the fruits before drying them, it should be borne in mind that during this procedure, the fruits lose some of the sugar and acid, so their taste after processing will not be as bright as that of the raw materials.
How to keep apples for the winter
If you need to keep apples for a longer period, then you can use other methods. I use several to get more fruit.
In the freezer
You can put fruits in the freezer whole and cut into slices. In the first case, the procedure is as follows:
- Wash the apples, wipe off moisture. Remove the tail and the seed box with a thin, sharp knife. It is not necessary to do this, but then it will be more convenient to use the fruits after defrosting.
- Remove the skin if desired.
- Arrange apples in plastic bags, release as much air as possible and tie.
- Place in the freezer.

You can leave the peel. But there will be no sense from it: after defrosting it is difficult to chew, but it slides off the pulp without problems.
To prepare sliced fruit, you need:
- Wash the fruit. Peel off the skin. Cut into 2 pieces and remove the seed box.
- Cut into pieces of the desired size. These can be squares, stripes, and so on.
- Dissolve 5 g of citric acid in 1 liter of water. Place the pieces in the solution for 20 minutes. This prevents them from darkening.
- Remove and dry on a towel.
- Arrange the pieces on the baking sheet so that they do not touch each other. Place in the freezer for 2-3 hours.
- Remove and fill in bags or plastic containers. Pre-freezing will make the pieces crumbly and easier to use. Place in the freezer.
In this form, apples can be stored for up to a year. To defrost, first put the slices in the refrigerator for 1-2 hours, and only then warm them at room temperature. If you're in a hurry, you can dip them in warm water. But in this case, the apples will soften a little.

If you put the fruits there, then you can easily keep them on the balcony (it doesn't matter if the balcony is glazed or not). This is because the box, thanks to its design, will maintain a constant temperature.
For making, I needed the following materials:
- cardboard boxes - 2 pieces of different sizes;
- polystyrene (thickness not less than 5 cm);
- insulation. I had wood shavings. You can replace it with sawdust, foam waste, simple rags or other insulation of your choice.
Subsequence:
- Pick up the boxes so that when they are placed one into the other, a gap of 15 cm remains.
- Put the small box in the big one. Fill the gaps between the cardboard boxes with insulation.
- Place a layer of Styrofoam on the bottom of the small box. Sprinkle sawdust, lay out a layer of apples. Continue this layer until the box is full.
- Put some more styrofoam on top. Close the large box. Cover her with a warm blanket and put her out on the balcony.
The shelf life in this case is 6-8 months. The only negative is the difficult access to fruit. Still, it's not very convenient to get it.

The preferred material for the storage box is wood. It is in it that the necessary microclimate for apples is created. Small holes need to be made in the box for ventilation. You need to lay apples in this way:
- Lay down the first layer. Then start spreading the second one, while making sure that the tails of the next row are placed between the two apples of the previous layer, so that they do not pierce the skin of the fruit and damage them.
- Lay it out until the box is full.
- For longer storage, sprinkle the fruits with sawdust of deciduous trees, buckwheat husks or sifted peat chips.

Experts recommend throwing all dried fruits out of the container where mold has been found. Some housewives prefer to avoid such drastic measures by thoroughly rinsing dryers under running water and re-drying them. Sometimes after that, the drying is frozen.
This is actually not the best idea. If mold appears on the surface, it means that its spores have penetrated deep enough into the product. And neither running water nor roasting in the oven will help. No matter what they say about the benefits of penicillin, mold in its pure form is a substance dangerous to health. Therefore, it is most correct to throw away infected dried fruits right away.
But if you notice that your apples are starting to get wet and sticky, rinsing and drying in the oven is a good solution.
