The meat stewed with mushrooms in sour cream will turn out deliciously juicy, tender and soft. And the thick creamy sauce goes well with any crumbly side dish or mashed potatoes.
The combination of pork with mushrooms and sour cream cannot be called easy for the stomach, but how delicious it is! The dish resembles the julienne known to all of us, but without cheese.
Mushrooms with meat can be cooked in the oven or in a pan. Any mushrooms that are available are suitable: champignons or forest, fresh or dried (pre-soak in water to swell). My recipe for today is pork with mushrooms in a pan.

Ingredients
- pork - 450 g
- champignons - 200 g
- large onions - 1 pc. (90 g)
- garlic - 1 tooth.
- 20% sour cream - 3 tbsp. l.
- wheat flour - 1 tbsp. l.
- salt, black pepper - to taste
- vegetable oil - 2-3 tbsp. l.
- bay leaf - 1 pc.
- dried dill - 1 tsp
Preparation
Cut the meat into cubes (or into cubes, like for goulash, but medium-sized, so that it cooks faster). For this recipe, it's best to take pork with fat, not too lean. If there are any films, then they need to be removed. There is no need to cut off the fatty layers, they will give the meat juiciness.
Heat a skillet and quickly sauté the pork until golden brown over high heat. If necessary, add a little vegetable oil (if the meat with layers of fat, then cook in a dry frying pan). Cook in a large skillet so that the pieces lie on the bottom in one layer - so a crust forms on the surface quickly, the meat will not lose its own juices, which means it will not dry out. If the pan is small, fry in portions. Transfer the browned pork to a plate and cover with a lid to keep it dry while you cook the mushrooms.
Peel and chop the onions. Heat a couple of tablespoons of vegetable oil in a deep frying pan. Pour the onion into it and fry it until soft and transparent.
Rinse the champignons, cut into thin slices. Add mushrooms to the sautéed onions, increase the heat and continue to fry without a lid until golden brown. Stir regularly to avoid burning. The moisture should leave the pan, and the mushrooms and onions should brown. Finally, add salt and pepper to taste.
Return the previously fried meat to the pan. Add chopped garlic clove and bay leaf. Pour in about 200-300 ml of hot water or broth to coat the meat. Cover, reduce heat and simmer pork until tender - this will take about 20 minutes (may take longer if the meat was tough).
While the pork is stewing, prepare the sour cream sauce. In a dry skillet, fry 1 spoonful of flour, stirring constantly. After about 30-40 seconds, it will turn into a pleasant pinkish hue and take on a light nutty flavor. The flour should not darken too much and turn brown! The flour will make our sauce thicker and will not curl up. And roasting is needed so that there is no flour aftertaste.
Remove the pan with flour from the heat. Pour in 100 ml of cold water, stir thoroughly so that there are no lumps. Then put the sour cream there, stir again (before adding the sour cream, make sure it is fresh - then it will not curl up and spoil the taste of the dish).
Pour the resulting sour cream sauce into a pan with meat and mushrooms. We throw away the bay leaf. Add some dried dill.
We continue to cook on low heat for 15 minutes, until thickened, stirring from time to time (it is better to remove the lid, let the excess liquid evaporate). In the process, adjust the amount of salt and pepper to taste.
Serve pork with mushrooms, stewed in sour cream sauce, best of all with mashed potatoes or porridge. You can complement the dish with pickles and other pickles. Bon Appetit!

I don't know mushroom places and I rarely go to the forest for mushrooms, but I buy boletus and other forest mushrooms at the market. Such a mushroom hike is always successful, I do not return without prey. Now in autumn boletus and other mushrooms are much less wormy than in summer, so there are fewer disappointments from the purchase.
In the summer, I have already dried porcini mushrooms for the winter, I have pickled them even earlier, but today we will cook porcini mushrooms in sour cream. This dish is very simple. Porcini mushrooms are so good that they do not need complicated preparation, they are good on their own, without numerous additives and additions.
That is why we do not need a lot of ingredients for making porcini mushrooms in sour cream: mushrooms, sour cream, butter, herbs, salt and a little pepper to taste.
Slice the white mushrooms. We can cut it not coarsely, if the boletus is strong, and if it is loose, it is better to cut it larger so that it does not crumble under the knife.
Put the boletus in a saucepan or bowl, rinse it several times.
Fill with water, salt and cook. During the cooking process, foam will form, we will remove it.
Little white mushrooms do not need to cook for a long time - about 25 minutes.

To prepare fried mushrooms in sour cream, we need:
- 500 grams of mushrooms
- 1 onion
- 200 ml sour cream
- salt and black pepper to taste
You can add a teaspoon of mustard, this is not for everybody. For decoration, you can use a sprig of dill or parsley. All ingredients are sized for three to four servings.
So, to start cooking, take the mushrooms, wash them, clean them of dirt, if you use champignons, you can remove the top skin. If the mushrooms are boiled or pickled, then it is necessary to rinse them and remove all the liquid from them, since during cooking the mushrooms release their juice. You can use a colander for this. After that, you need to cut the mushrooms into thin strips, or if the mushrooms are small, then into small pieces, you can even cut into four parts.
In the meantime, you need to warm up the pan, pour a little vegetable oil into it, and then throw the chopped mushrooms into it. Fry over low heat until all the liquid and a little juice have evaporated from them. Remember to stir from time to time.
While the mushrooms are fried, you need to cut the onions into half rings or small cubes and add them to the mushrooms.
Stir lightly and fry until golden brown. Then pour sour cream into the prepared mushroom mass, mix thoroughly, salt and pepper (add mustard if you are a fan of a little spicy).
Bring the dish with sour cream to a boil and cover, simmer the mushrooms for about 15 minutes, taste the salt and pepper, if necessary, add a little boiled water if the mushrooms are not quite ready yet.
