Mushroom soup with meatballs

Step by step recipe

  1. Make meatballs. Peel the onion and mince or cut into small cubes. Mix the onion with the minced meat. Beat the egg with a little salt and black pepper, pour into the minced meat and knead. Make the meatballs about 3 cm in diameter and set aside on a cutting board or plate for now.

  2. Put the mushroom broth to boil. Rinse the mushrooms, put in a three-liter saucepan, pour cold water about 4-6 cm below the edge of the pan, bring to a boil and reduce heat.

  3. After about 10-15 minutes from the beginning of the boil of the mushroom broth, add the potatoes. Peel the potatoes, cut into small pieces, pour into the mushroom broth, stir, bring to a boil and reduce heat.

  4. After about 5-10 minutes from the beginning of boiling the potatoes, put the meatballs in the soup. Place the meatballs in the soup one at a time, bring to a boil and reduce heat.

  5. Prepare roast carrots. Pour vegetable oil into a cold, dry frying pan about 2-3 mm above the bottom and put on medium heat. While the pan is heating up, peel the carrots and coarsely grate or cut into thin strips. Pour the carrots into the heated oil and fry, stirring constantly, until the pieces are easily broken with a spoon.

  6. Check the readiness of the potatoes. If the pieces are effortlessly kneaded with the back of the spoon against the side of the pot, you can continue.

  7. Put the carrot roast in the soup. Stir, bring to a boil, reduce heat, cover and simmer for 2-3 minutes.

  8. Chop the dill.

  9. Add dill to soup and season with salt. Pour the chopped dill into the soup, stir, taste with salt, add salt as needed, stir again, bring to a boil, reduce heat, cover, let it simmer for 2-3 minutes and remove the pan from heat.

  10. Mushroom soup with meatballs is ready! Serving on the table, the soup can be seasoned with sour cream.

Recipe "Cheese soup with turkey mushroom meatballs":

Put the rice to cook, the sort that will then be crumbly.
Slice young cabbage thinly.

Boil the mushrooms (I have honey mushrooms) until tender. Cut the turkey shank into pieces and punch in a blender along with the boiled cooled mushrooms. Add breadcrumbs, salt and pepper to taste. Stir and set aside.

Pour water into a saucepan. When it boils, put chopped cabbage there and cook until almost cooked.

While the cabbage is boiling, we take this kind of cheese. 2 pieces.

Three of it on a coarse grater.

Then finely chop the onion, fry it until golden brown.

In the meantime, our cabbage was cooked almost until cooked. And from the minced meat, previously cooked, we sculpt meatballs and immediately throw them into a boiling soup.
I put the meatballs in boiling water until the processed cheese was added, so that I could see where they fall, so that they would not stick together in the end)

When the meatballs began to float, add the grated processed cheese, fried onions and dried dill. Mix gently. Add freshly cooked rice. Salt to taste. Mix again. We boil for 5-7 minutes. To cover with a lid.

Noodle soup with mushrooms and meatballs

The recipe includes the following ingredients:

  1. Minced meat - 250 grams.
  2. Champignons - 200 grams.
  3. Bulb.
  4. Carrot.
  5. Potatoes - 2 pieces.
  6. Vermicelli.
  7. Spices.
  8. Greens.

Initially, you need to put a pot of water for the stew on the fire. While it comes to a boil, you can prepare the minced meat and shape the meatballs. Scroll the meat and add the onion, chopped into small cubes. Season with salt and pepper. Stir thoroughly with a spoon, and then crush the minced meat with your hands so that a homogeneous and soft mass comes out.

Next, you need to make small meat balls. You can send meatballs to salted boiling water.

Rinse the mushrooms thoroughly, pour over them with boiling water and cut into medium plates. Send the mushrooms to the saucepan with the meatballs, which must be boiled separately for at least 7 minutes. Cooking time 5 minutes.

Peel the carrots, cut into half rings coarsely. Peel the potatoes, cut into strips. Send vegetables to soup. Add salt to taste if necessary.

Cook until the potatoes are boiled. 3 minutes before its readiness, put the vermicelli. At the end of cooking, add chopped greens. Let the stew steep.

Quinoa has recently appeared in our family diet, but surprisingly it has taken root! If we talk about soups, then most of all they like and often cook with it vegetable and mushroom.

I will show you a variant of a soup made from dried forest mushrooms with minced meatballs. Chicken, beef and mixed pork and beef or pork and chicken are suitable as minced meat.

Prepare the ingredients according to the recipe list.

Rinse dried mushrooms and soak in water for about one hour, or until flattened and tender. I have an assortment of forest mushrooms dried in an electric dryer, so both they and the broth are relatively light. And if you have dried mushrooms in the oven, then both they and the broth will be darker.

If the mushroom slices are large, then chop them into the desired size (strips or cubes).

It usually takes about an hour to cook mushroom broth. In the second half of cooking, i.e. after 30-40 minutes, the rest of the ingredients can be added to it.

Submit the quinoa first, after rinsing it. Season with salt.

Then add finely diced onion to the mushroom soup.

Form the minced meat into round pieces and add them to the soup last. So they will not kill the valuable rich mushroom broth, and after being cooked in a matter of minutes, they will remain soft and tender. Do not forget to lightly salt the minced meat!

Taste ready-made mushroom quinoa soup and add salt to your taste.

My husband really likes this mushroom soup with meatballs and quinoa, or rather, he likes it much more than without meatballs. I hope you enjoy it too!
