Pancakes stuffed with minced meat and mushrooms with onions
Delicious homemade pancakes with such a hearty filling can easily replace lunch. Well, with tea or coffee - there will be no hungry at all.
For 6-8 servings for the test you will need:
- 1⁄2 cup warm water
- 1 cup pasteurized milk
- 4 large chicken eggs;
- 4 tablespoons unsalted butter, melted;
- 1 cup flour;
- 1⁄4 teaspoon salt
- For the filling: 700 grams of minced pork;
- 500 grams of mushrooms, chopped;
- 1 head of onion, diced
- 3 hard-boiled chicken eggs.
- For minced pork - 1⁄4 teaspoon pepper and 1⁄2 teaspoon salt.
- For mushrooms - 1⁄4 teaspoon pepper and 1⁄2 teaspoon salt.
- 1 spoonful of mayonnaise.
Recipe for delicious minced meat and mushroom pancakes:
First, we make the filling. Fry the minced pork with the added salt and pepper. When the minced meat is browned, it is ready. Stir constantly while toasting. Transfer to a bowl.
Fry mushrooms with onions, salt and pepper.
Toss the mushrooms with the minced pork. Pass through a meat grinder along with boiled eggs (cut into circles to make it easier to enter the hole of the meat grinder). Add mayonnaise to the cooked meat - mushroom mince. Stir. Now we make pancakes.
Place all items to be baked in the bowl in the order they are listed above. Beat the dough. Beat with a blender or mixer.
Bake the pancakes in a 35 cm non-stick skillet. Grease the pan for the first pancake. Pour the dough very thinly. Do not stack hot pancakes on top of each other. Fry the dough lightly.
Now wrap the filling in pancakes. Place the filling in the center of the pancake. Spread over the entire surface of the pancake with a spoon. Roll up. You can cut the rolled pancake in half if the size seems large to you.
Melt about a spoonful of butter in a skillet and fry the prepared filled pancakes. Be careful not to burn the pancakes.
Pancakes with meat and mushrooms are ready.
Secrets of making delicious pancakes
There are several rules for making pancakes:
- for 1 pancake, take 1 medium tablespoon of flour;
- 1 egg for 10 pancakes (if you need to add 2 more);
- for 6-8 pancakes, you take ¾ glass of milk (depending on the size of the egg);
- the pancake dough should have a thick, creamy consistency;
- put 2 tablespoons of the filling on each pancake;
- the pan in which the pancakes are fried should only be used for this purpose (then they will not stick)
- After cooking, filled pancakes can be cut into pieces, rolled in eggs and breadcrumbs, and then fried in olive oil to make croquettes.
- vegetable oil, you can also add directly to the dough, then you should not fry in a pan with oil.
