Description of sweet potato

The plant, called sweet potato, is a creeping vine up to five meters long (most often no more than three). Its stems are rooted at the nodes, so the height of the sweet potato does not exceed 20 cm. The shape of the leaves can be finger or cordate, depending on the variety.

Peru and Colombia are considered the birthplace of culture, from where sweet potatoes began to spread. In tropical countries, it has been grown for several years. But in temperate and subtropical climates this is not always possible, since already at a temperature of -10 ° C the plant stops developing, and if it drops below 0 ° C, it dies completely. Therefore, in such conditions, it is grown as an annual. For the full development of culture, it will take at least six months, so in some regions it is not possible to grow sweet potatoes.

Pollinated by cross-pollination by insects. The flowers that form in most varieties are large, funnel-like, located in the leaf axils, light, are white, pinkish or lilac. When they bloom, a seed box appears in their place, in which the seeds ripen - 4 small black balls.

The culture propagates not only by seeds, but also by tubers, which are seals and thickenings on the lateral roots. Despite their superficial resemblance to potato tubers, these crops are not related (sweet potatoes belong to the Bindweed family). It is impossible to say unequivocally what the sweet potato tubers look like. All characteristics depend on a particular crop variety: color of peel and pulp, weight and size, shape and length.

The taste of sweet potato tubers also depends on its variety, location and growing conditions. Some species taste like banana, melon, chestnut or pumpkin.

Varieties

All varieties of sweet potatoes can be roughly divided into 3 types depending on the quality of the fruit:

  1. Dessert (their flesh is very sweet, juicy and soft).
  2. Fodder (the pulp is dryish and slightly tough, unsweetened).
  3. Vegetable (the flesh is not very sweet).

In addition, there may be the following division of sweet potato varieties:

  1. Increasing the aboveground vegetative mass (this type is cultivated in Japan).
  2. Forming root crops (the most common type).

Varietal varieties can also differ in the following characteristics:

  • peel: it can be yellow, cream, pinkish, red, orange, there is even a purple sweet potato;
  • flesh color: most often white or pink, but it can also be purple;
  • weight: varies on average from 0.2 to 3 kg, but there are also quite large specimens weighing up to 10 kg;
  • shape: mostly elongated, but can also be rounded or ribbed;
  • yield;
  • the number of root crops on one bush;
  • color and shape of foliage.

The most famous varieties of such sweet potatoes are Vir-85, Hat Bay, Salmon, Pobeda-100, Sladkaya-100. Nancy Hall tastes like pumpkin, and Hae-tung tastes like chestnut.

Why is sweet potato useful?

The composition of the sweet potato has determined the variety of useful properties of the root crop:

  1. The high content of vitamin A helps to stimulate collagen production and thus maintain youthful skin and maintain healthy eyes. In order for this vitamin to be better absorbed, it is necessary to add oil to dishes from this product.

  3. Vitamin B6, with the constant use of the root vegetable, helps to strengthen the walls of blood vessels and prevents diseases of the cardiovascular system.
  4. Potassium and magnesium are indispensable for stressful conditions, insomnia and chronic fatigue, as they strengthen the nervous system, normalize the work of the heart.
  5. Calcium, which is also found in the root vegetable, is needed to strengthen tooth enamel, nails, hair and bones.
  6. Fiber helps to cleanse the body of harmful compounds, and in addition, maintains a feeling of fullness.
  7. Phytonutrients reduce the harm from exposure to heavy and radioactive metals, and reduce the likelihood of cancer.
  8. Due to the presence of anthocyanins and polyphenols in the composition, sweet potato has the ability to stop inflammatory processes.

It also contains proteins, water, ash, carotene, iron, phosphorus, folic acid and other useful elements. The calorie content of sweet potatoes is slightly higher than that of potatoes (about 65 kcal per 100 g), which is associated with a higher content of starch and carbohydrates.

Not only benefits, but also harm, sweet potatoes can harm the human body:

  • the presence of oxalic acid (in non-critical quantities) can be harmful to people with diseases of the excretory system (kidney or urinary tract);

Cooking recipes

This vegetable does not lose useful components during processing., therefore, the use of sweet potatoes is recommended not only raw, but also thermally processed: it can be baked, boiled, fried. They add root vegetables to the first and second courses, interfere with diet salads. Sweet potato goes well with lemon juice or orange peel, you can season it with hot peppers and curry.

Puree

To prepare this dish, root vegetables are peeled, cut into cubes, poured over with water and put on fire. Cook for no more than half an hour (you need the vegetable cubes to become soft).

The water is drained, leaving a little, and the cooked sweet potato is kneaded with a fork or potato grinder. You can pour a little boiled milk into the puree.

During cooking, neither salt nor sugar is added: the finished dish turns out to be quite sweet.

Fried sweet potato

It got its distribution thanks to the master of the sweet potato grower A.P. Kochetkov. and Kurdyumov N.I. The peel is light pink, the flesh is creamy with orange pigmentation. Good in any form: fried, baked, boiled, except raw (dry starchy taste). It is noteworthy that it germinates at a rather low temperature of 16-18 degrees.

Har bay - a rather tasty dessert variety, white pulp, cream peel. Forms probably the most massive aboveground part that can be used for composting or for animal feed, which is a huge plus. The disadvantages include poor keeping quality and a predisposition to fungal infections. Healthy bushes have good yields.

Vinnitsa aboriginal (VA, Georgia Red, Sukhum yellow) - dessert variety, author's name from Alexander Vorobyov! It forms a small bush, but nevertheless has good yields. Root vegetables have a yellow flesh with orange or purple blotches.

Manchu unknown (Manchurian) - a sort of maternity hospital from eastern countries (as the name implies), was widespread in the USSR. The main advantage is the ultra small size of the bush (important for small areas), but at the same time, large yields. It has a light pink skin and a yellowish juicy flesh. Great for salads, delicious raw. Blooms profusely and knits seeds. Of the minuses, part of the crop withers faster than usual.

Buryachny (Portuguese third (P3), Kiev orange, Kiev Perlina) - P3 is the codename given by the sweet potato breeder Vadim Dzyuban. The pulp is yellow, the peel is the same color as that of a beet, and under the skin layer of about 1 mm it has a purple color. When growing seedlings, cuttings give roots along the entire length of the stem, which is actually unique (usually only from internodes).In the open field forms very thick stems (relative to other varieties). Fairly productive variety under good conditions.

Buryachny variety (Kiev orange, Kiev perlina)

Beauregard variety

Garnet (Diana) - dessert variety with orange pulp, distinguished by high taste. The skin is dark crimson. The leaf shape is decorative, somewhat reminiscent of maple leaves. It blooms profusely in the open field, some seeds usually have time to ripen. It has several disadvantages: unstable yield, elongation of root crops.

Betty - a variety with orange pulp, a distinctive feature of which is the decorativeness of the leaf - somewhat reminiscent of a hemp leaf. It belongs to bush varieties, usually forms a compact bush.

Porto amarelo (P1, Porto Orange) - Portuguese variety with orange pulp and rind. A distinctive feature is the height of the bush - the tallest variety. The leaves have a decorative carved shape.

They do not tolerate temperatures below + 10 * C, so they can only be sent out during the warm season in the fall (October-November). POTATO TASTE

Very often people ask to describe the taste of sweet potato, but how to do it? The taste is always hard to describe. Especially the taste of sweet potato, because this is a new and unfamiliar culture for us. Most people believe that sweet potatoes resemble frozen potatoes, which is fundamentally wrong. Everyone knows what taste a carrot or an apple has and does not think about what it looks like, so sweet potato has its own unique taste. You can look for some analogs among familiar tastes, but this is not easy, because everyone finds different tastes in the taste. Sweet potato tastes like corn, chestnut, pumpkin, banana, potato, carrot. However, pumpkin and carrots are more noticeable in orange-fleshed varieties due to carotene. At the same time, potato tones are also present. Coniferous notes are seen in the Taynung-T65 variety. There are sweeter varieties, there are less sweet ones. But if you eat sweet potatoes for a long time, then questions about its taste will not arise, because after trying at least once you will remember it.

DESCRIPTION OF VARIETIES

I note right away that describing the color of a tuber is a useless exercise, since it will be different in different growing conditions. Therefore, if this parameter is present in the description, then it is conditional. For example, Pobeda-100 in the Kuban has an almost white skin, and to the north of the Rostov region it is pink; in the Tuapse region, they collected both light skin and pink from one garden bed. Some varieties were bought in supermarkets in different countries, and therefore bear conventional names.

1. American Beige - Forms a compact shrub with a three-toothed leaf. Root crops are beige, flesh is white, nicely shaped, homogeneous. Moderately sweet, firm, starchy. Can be used as a potato substitute. Showed a decent yield in the North-West.

2. VINNITSKY ABORIGEN-Forms a compact bush. In autumn, the leaves turn dark red. The tubers are yellow and compact. The yield is average.

3. Bayou Bell - the creators originally called it LA 07-146) medium-growing, large bush with lashes up to 80 cm, normal leaf or with small teeth, tubers with bright red skin and orange pulp, elongated tuber, arrangement of tubers not very compact. Harvestable. The taste is pleasant, moist. Keeps perfectly. Germinates slowly even at elevated storage temperatures.

4. White unknown NBS- (from the collection of the Novosibirsk Botanical Garden), a powerful plant, beautiful foliage, poorly cut, tubers with white skin and white pulp, early maturing, the arrangement of tubers is not compact. The taste is pleasant, rather dry, crumbly. In cooking, it can replace potatoes. Tubers with excess moisture can crack. It germinates easily one of the first, but this does not affect the taste and quality of root crops. In our area, it is the most gnarled and more damaged, apparently to the taste of the underground inhabitants.

5. White (Afghan). Showed excellent yields in 2015 and 2016 in contrast to Red Ginseng, which is considered its twin. A medium-sized dense bush with whips up to 1 meter, thick brown stems. Great taste.

6. Bellevue. A variety with orange flesh. Very nice color beige tubers of good shape.Young foliage of purple color, whips up to 1.5 meters. The variety is thermophilic, a promising variety for warm regions. It sprouts poorly. Yielding, forming even root crops even in conditions of heavy loam. It has a high fructose content. Stores well.

7. Betty is a sweet variety. Potato tubers, compact arrangement, orange skin and pulp, compact bush, early carved leaf.

8. Beauregard - One of the most common varieties for industrial cultivation, thanks to the leveled root crops, and their compactness, all root crops are located at the base of the bush, and also has several lashes up to 2 meters long. Can be grown in thickened plantings with a distance between plants of 20-25 cm. Tubers are beautifully shaped, the skin is pink or copper (this variety has several varieties), have a sweet taste, orange pulp, rich in carotene. Ripening period is medium-late 110-120 days. Stored well, germinates with difficulty. Bred at Louisiana State University in the 80s. In the USA it is the benchmark. From the Beauregard variety in the UK, the Beauregard Superior variety was bred by virus-free cloning.

9. Brazilian - tolerates not very favorable climatic conditions and takes root well in the middle lane. It gives a consistently high yield, resistant to diseases and pests. The tubers are characterized by a light skin and white flesh with a mild taste.

10. Bushbok- South African variety, now cultivated all over the world, popular in Asia and South America. In Honduras, one of the main varieties grown commercially.
